このたび、弊社が羽田空港第2旅客ターミナル3階にて運営する韓国料理店「Miss Korea」は、今年も認証機関による年次調査を受け、「オーガニックレストランJAS」の認証が継続されましたことをご報告申し上げます。
「Miss Korea」は、2020年7月に同認証を取得して以来、オーガニック食材の適切な使用と管理、一般食材との区分、レシピや入荷記録の管理、お客様への正確な情報提供など、認証基準に沿った店舗運営に継続して取り組んでまいりました。
「オーガニックレストランJAS」とは?
「オーガニックレストラン」という名称から、店舗で使用するすべての食材がオーガニックであると思われることがありますが、本認証は、すべての食材をオーガニックにすることを求める制度ではありません。
日本国内におけるオーガニック食材の供給量は、現在も非常に限られています。
農林水産省の公表資料によると、令和6年度における日本の有機農業の取組面積は約3万9,800ヘクタールで、日本の耕地面積全体に占める割合は、わずか0.9%です。
さらに、令和5年度の国内生産量に占める有機JAS格付数量の割合は、野菜が0.43%、米が0.12%、果実が0.14%、麦が0.11%、大豆が0.47%となっています。主要な農産物の多くで、有機JAS認証を受けたものの割合は0.5%にも満たないのが現状です。
このように、国内で生産・流通するオーガニック食材は、一般の食材と比較してまだ極めて少なく、必要な品目と数量を一年を通して安定的に確保することは、決して容易ではありません。
そのため、「オーガニックレストランJAS」は、店内のすべての食材をオーガニックにすることを認証するものではありません。
一方で、その認証基準では、オーガニック食材を80%以上使用した料理を5品目以上提供することが求められています。また、第三者機関による定期的な検査を受けるとともに、オーガニック食材を一般食材と明確に区分して保管・管理し、認証対象となる料理を所定のレシピと適切な記録管理に基づいて調理・提供することも、認証を維持するうえで重要な要件となっています。
スタッフ教育と日々の管理
「Miss Korea」では、制度の内容をスタッフ一人ひとりが正しく理解し、お客様からのご質問にも正確にお答えできるよう、店舗スタッフ向けの「オーガニックレストランJAS簡易マニュアル」を作成し、日々の教育と店舗運営に活用しております。
マニュアルには、オーガニック食材の保管・調理方法、在庫および入荷記録の管理、認証対象メニューの取り扱い、お客様へのご説明方法などを、分かりやすくまとめています。
オーガニックレストランJAS認証は、一度取得すれば終わりというものではありません。スタッフ全員が制度を正しく理解し、日々の店舗運営において定められたルールを丁寧に守ること、そして毎年行われる認証機関の調査を受けることによって維持される認証です。
これからも「Miss Korea」では、認証基準を誠実に守りながら、限られた供給環境の中でも、可能な限りオーガニック食材を取り入れた韓国料理をご提供してまいります。

“Miss Korea” Renews Its Organic Restaurant JAS Certification: Our Ongoing Commitment
We are pleased to announce that “Miss Korea,” our Korean restaurant located on the third floor of Haneda Airport Terminal 2, has successfully completed this year’s annual inspection and renewed its Organic Restaurant JAS certification.
Since first receiving the certification in July 2020, Miss Korea has continued to operate in accordance with the certification standards. Our ongoing efforts include the proper use and management of organic ingredients, clear separation of organic and conventional ingredients, careful control of recipes and receiving records, and the provision of accurate information to our customers.
What Is Organic Restaurant JAS Certification?
The term “organic restaurant” may lead some people to assume that every ingredient used by the restaurant is organic. However, Organic Restaurant JAS certification does not require every ingredient served at a certified restaurant to be organic.
The supply of organic ingredients in Japan remains extremely limited.
According to data published by Japan’s Ministry of Agriculture, Forestry and Fisheries, organic farming accounted for approximately 39,800 hectares in fiscal year 2024—just 0.9% of Japan’s total cultivated land.
The figures are even more striking when individual agricultural products are considered. In fiscal year 2023, domestically JAS-certified organic products accounted for only 0.43% of total vegetable production, 0.12% of rice production, 0.14% of fruit production, 0.11% of wheat production, and 0.47% of soybean production.
In other words, for many of Japan’s major agricultural products, less than 0.5% of domestic production is certified organic. These figures illustrate how limited the domestic supply of organic ingredients remains and why securing the necessary varieties and quantities consistently throughout the year can be particularly challenging for restaurants.
Organic Restaurant JAS certification therefore does not certify that every ingredient used by a restaurant is organic.
Instead, one of its principal requirements is that a certified restaurant offer at least five dishes, each made with 80% or more organic ingredients. Organic ingredients must also be clearly separated from conventional ingredients during storage and handling, while certified dishes must be prepared according to established recipes and supported by appropriate records.
Staff Training and Daily Management
To ensure that every member of our team understands the certification correctly and can provide customers with clear and accurate information, Miss Korea has prepared a concise Organic Restaurant JAS training manual for its restaurant staff.
The manual is used in our day-to-day training and operations. It covers the proper storage and preparation of organic ingredients, inventory and receiving records, the handling of certified menu items, and appropriate ways to respond to questions from customers.
Organic Restaurant JAS certification is not maintained simply by passing a one-time inspection. It requires every member of the restaurant team to understand and follow the established procedures each day, together with an annual inspection conducted by the certification body.
Miss Korea will continue to uphold these standards with care and integrity. Even within Japan’s limited organic supply environment, we will make every reasonable effort to incorporate carefully selected organic ingredients into our Korean dishes.
